I was not considering putting her on grass with no muzzle, was wondering

how others handled it and what the horses' reactions to it were when they
could not eat or drink anything.

A clarification: a sealed muzzle does NOT prevent a horse from drinking -
it only prevents it from eating. You should never prevent a horse from
drinking. Water will enter a grazing muzzle quite easily so no danger on
that front.
