How important is crude protein when picking a safe hay?

How much does protein contribute to weight gain? My hay choices are an eastern grass with DE of .80, and combined sugar/starch of 5.4 and the protein is 14%, the other hay is a local with a DE of .86, combined sugar/starch of 9.8 and protein is 7.3%. My vet says that my mare is also very calorie sensitive so I was going to go with the Eastern grass. Danielle
