I can't answer the insulin question, but any hay change can cause changes in the manure till the digestive system bacteria adapts. I keep Ration Plus on hand for that kind of thing and

Did your horse eat these sulfate forms well? Did you taste them?? It looks like a sensitive gram scale would be necessary to measure correct amounts, since they'd be small.
